Frozen S’mores Recipe

Eating s’mores around the campfire is fun and I like to do it during the summer…ONCE…but I also love to mix it up and make this cool summer frozen version of the perfect summertime treat!! Frozen S’mores are now a family favorite. ANDDDD I don’t want to diss the original marshmallow goodness, but I like frozen s’mores EVEN BETTER!!! Don’t tell!!

The best part about frozen s’mores is that it takes just 3 ingredients and about 5 minutes. These are perfect to make ahead for a bbq or house party, and are a total hit. We like to mix it up and use different flavors of ice cream too. Some of our favorites are mint chips and strawberry.

A few tips I have learned over the years

  1. Let your ice cream thaw JUST A LITTLE. It makes it easier to SMOOSH the s’more and give it that melty s’more look.
  2. Use a REALLY chocolaty chocolate ice cream. I like to get one with fudge or chocolate chunks in it JUST to up the chocolate taste.
  3. You can make these extra big by leaving the graham crackers whole and creating one LONG s’more. Also, just an fyi…it can be hard to break CHEAP graham crackers in half without breaking them. Be prepared to have some rejects. ORRR boy the name brand.
  4. Make sure you freeze them…at least for an hour or so. They still taste good when not frozen, but the whipped cream is very soft. When frozen, the whipped cream creates a yummy mashmallow texture.
  5. Store frozen s’mores in the freezer overnight. They will last longer, but the graham crackers will begin to soften.
  6. Make a bunch because everybody will want MORE!!! ENJOY!!! –JESS

Frozen S’mores

These ice-cream s'mores are JUST as fun and addicting as the original…but without the fire!!!

Equipment

  • freezer

Ingredients
  

  • 1 scoop chocolate ice-cream (I like to use a REALLY chocolatey ice-cream with some fudge or chocolate sauce in it for the original s'more idea. But we have also made these with mint chip or strawberry ice-cream and loved it. )
  • 1 cracker graham cracker (You can make extra large s'more by NOT breaking the crackers in half.)
  • 1 spoonful whipped topping

Instructions
 

  • Break your graham cracker in half
  • Let ice-cream sit for a couple of minutes to thaw JUST A LITTLE for soft scooping. Place one small scoop of ice cream on half of cracker.
  • Add one spoonful of whipped topping to the top of ice cream.
  • Place 2nd half of cracker on top and lightly press. Stop pressing when the layers start to SLIGHTLY peak out of the edges of the cracker
  • Freeze for at least one hour. This will give the whipped topping more of a marshmallow consistency. These will store well over night. If stored longer, they are still yummy, but the cracker will start to get softer.
