Well things are gonna be different this summer, but that doesn’t mean we cannot enjoy some good BBQ food…and for ME, that means fruit pizza. My mom makes a super yummy version of strawberry pizza that has been a family staple since I was a kid, BUT it takes more time in the kitchen and LESS time…well NOT in the kitchen. So I have adopted this super simple cheater version that has become a fun tradition for MY family. And the best part is that it doesn’t have to be a flag, OR a full sized sheet. I have included some tips in the recipe for how to adapt this recipe to make it work for every day/any day/or another day:)

Fruit Pizza Flag

A yummy summer dessert PERFECT for BBQ's and potlucks!!
Prep Time 20 minutes
Cook Time 15 minutes

Ingredients

Crust

  • 1 16 oz package refrigerated sugar cookie dough even the Walmart brand works

Cream Cheese frosting

  • 1 8 ox cream cheese, softened the WHIPPED kind is PERFECT
  • 1 tsp vanilla For the best frosting of your life…throw in a tsp of almond extract too. YUM!!!
  • 1 1/2 cup powdered sugar

Toppings

  • 1 cup strawberries sliced
  • 2 banannas sliced
  • 1 handful blueberries

OPTIONAL

  • chocolate syrup

Instructions

  • Preheat oven to 350°F. Press cookie dough into a lightly greased pizza pan (approx 12-14 inches). Bake crust for 12-14 minutes or until cookie is JUST golden brown. Cool before adding the toppings.
  • Beat together cream cheese, powdered sugar, and vanilla until smooth and fluffy. I liked the whipped cream cheese because it makes this step a SNAP!!
  • Make sure your crust is completely cooled, then spread cream cheese frosting onto the crust…I like to go as close to the edge as possible….but I LIKE cream cheese frosting.
  • Top frosting with fruit toppings. If I am making for everyday, I cut the bananas and strawberries into smaller pieces mix them equally over the crust…no pattern. This makes the taste more uniform…but the finished product less cute:)
OR Mix multiple different fruits for a yummy summer berry pizza.
  • And this final step is optional, but to amp this up to a level 10, drizzle each piece with chocolate syrup. This creates a yummy banana split vibe that is SOOOO DELISH. You can drizzle chocolate on the entire pizza, but just a warning, it makes it less visually appealing. Also, it starts to get a LITTLE soggy. Not bad, but you have been warned. If you want the dish to stay pretty and the crust to stay more crisp, add the syrup RIGHT before devouring.

Other ways to enjoy:

  • Lots of berries or fruit can be added…mango, kiwi, raspberries, peaches, etc. Also, if you are making ahead of time, wait until right before serving to slice and add the bananas. Blackberries work great for the stars as well.
  • Instead of one BIG pizza, create mini banana split cookies by BAKING the cookies individually according to package instructions. Then top them individually. They look adorable as little heart shaped cookies for Valentine's Day.
  • Use chocolate cookie dough for a yummy chocolate strawberry pizza.
